ORGANIC
A pure, carefully and lovingly made Chablis from sisters Nathalie and Isabelle Oudin. On the nose, it gives plenty of white flowers and fresh fruit aromas; the palate is elegant and structured, with underlying minerality throughout and good acidity. It drinks well now but the recommendation is to give it five years to fully develop.
Nathalie and Isabelle inherited the estate from their parents, who moved from Paris to the countryside when they were children, and started growing grapes in “their own way”. They now cultivate 10ha of low yielding Chardonnay, divided into three appellations: Chablis, Chablis Premier Cru Vaucoupins and Chablis Premier Cru Vaugiraut. The sisters take on a minimal intervention approach both in the vineyard, in the process of being certified organic, and during vinification, allowing fermentations to happen naturally, thanks to wild yeasts only, and keeping as much of the lees as possible to impart texture and limit the use of sulphur.
