This wine is technically a “blanc de noir” white wine made using a red grape variety. It’s a free run juice that has no skin contact. 
It’s got a great minerality, it’s floral with a touch of herbs. White flowers, jasmine, lemon, apple, and lychee. Crunchy wine with a lovely texture. 

Rico Nuevo is a baker turned winemaker tending to his great-grandfather’s vineyards in Sierra de Gredos.
