ABOUT THE WINE
Stephane Vedeau took over the running of J. Boutin from his mother. The vines have to see Rhone to make good wines the local elders used to say, believing that the best terroirs are always close to the river where the vines survive on granite steep slopes. J. Boutin have an excellent location, one of the highest vineyards in Crozes-Hermitage, close to the river. Thanks to the granite soil and the altitude their wines develop a deeper complexity. There is no sulphite added and no clarification or filtration allowing the terroir to be fully expressed.
TASTING NOTES
A crystalline, mineral halo immediately defines the contours of this cuvée. Small roasted hazelnuts coated in beeswax, white mint, a touch of champagne style chalk, a hint of redcurrant after aeration, and a shadow of white truffle.
FOOD PAIRING
Serve at 12 to 13 degrees with structured fish such as turbot in sauce, lobster thermidor or white meat with truffles.
