VESO’s limited-release Tomato Vermouth is a unique, savory aperitif crafted from two types of tomatoes—Purple Cherokee Heirlooms and Early Girl Tomatoes. These tomatoes were infused in grape spirits before being pressed and mixed with 2023 Chardonnay, then barrel-aged for five months. A special infusion of young tomato leaves in May 2024 adds herbal, vegetal, and minty notes, while Kombu seaweed enhances umami and brininess. Finished with a touch of red beets for earthiness and color, this vermouth offers a delicate and bright flavor profile perfect for tomato martinis or as a substitute for dry vermouth in savory cocktails. Limited to just 600 bottles, this vermouth won’t be back until Summer 2025.
Perfect in tomato martinis, but can also be used in place of any dry vermouth for a super savory tomato kick. Use it in savory cocktails to amplify umami, or mix it with citrus or fruit flavors to build depth and complexity.
